If I understand correctly you are just using the sim for data. Just forward the calls to a number that doesn't exist. That's what I did with my data sim. Worked well

It may be better at identifying intents, especially with different dialects and languages. You could tell it to send the response in a specific format, say json. Never tried it but might work.

I use dns.adguard.com on my android. Seems to work well over the past year and a bit. Seldomly things don't work and I need to switch it off but then back on once I'm done.
