Last month, Boyle told Empire that he was going to be directing the trilogy capper, and claimed that it wouldn’t be shot “until audiences respond to the first film.” Judging by the record-breaking reaction to the trailer, I don’t believe Boyle/Garland will have much of a problem completing their trilogy.

In fact, it actually looks like it’s now on the fast track as a recent listing has “28 Years Later: Part 3” starting production on March 31, 2025. The entire trilogy will have been shot and completed by the time Boyle starts to do press on the first one in June.

We were already in uncharted waters when they decided to finish a trilogy with a trilogy. In the examples you mention, they had a successful part 1 so the others were greenlit. Technically 28XL has also had a successful part 1, and a less successful part 2. The only surprise it has taken this long to come back for part 3, which is now 28XL 3a, 3b and 3c.

I presume the quality of the story, the big name talent involved, the low budget (28YL 1 was partly filmed on an iPhone) and the quick turnaround meant the studio was happy to write some cheques. The positive reaction to the first trailer can't have hurt.
