Is there any good FOSS app that could record the phone GPS location, but keep the data locally on the same phone, no dialing out?

Like the Google Maps location history, just not sharing it with Google services.

Have you tried to use an app like OSMAND?

It can record the GPS locations so you can check later where you have been on a particular day? I use it for car navigation so that would be nice, but didn't know it had such an option.

Yes it can. Been using it to record bike tours. And you can overlay the recorded tours on the map, e.g. to make out areas you havent been yet. And you can also use tracks as routes to do them again incl. directions, too.
