I think Nintendo Kart would be a nice follow-up, with stuff from all of Nintendo's IP.

There are at least 10 non Mario characters in game aleeady.

Yes, but it's still 90% Mario. There's a lot of new stuff they could introduce if they bring in not just new characters, but tracks, weapons, and mechanics themed on other IPs.

That works. Hell, you could even get non-Nintendo characters in there! Pac-Man has already ridden karts with Mario:
